Tipsy Tuesday – Watermelon Martinis

I want to thank Syrup and Biscuits for getting the word out that yesterday was National Watermelon Day. She said she was making a steak marinade, which sounded so yummy, and questioned her readers as to what THEY were going to do to celebrate the day. Since I had dropped the ball as a food blogger and totally missed the opportunity to plan something for this auspicious occasion, I began racking my brain for an interesting way to use the day’s ingredient. I had already planned the meals for this week so I knew it would have to be some sort of addition. I thought about a dessert but I love watermelon the most in it’s naked state with no fuss or muss to it.

Smoke must have been coming out of my ears as my brain was grinding to figure this out. Wow Bobbi, is it really that hard to come up with something interesting to do with watermelon? BING the lightbulb in my head. The weather here has been so beautiful, it really has just made us want to be outside all evening. We turned the heat down in the hot tub to make it a warm tub, and I knew I wanted to make something that would compliment the out of doors experience. On to my trusty Google I jumped and after much searching and deliberation decided on this yummy concoction by Mr. Bobby Flay.

After trying this drink everyone here will attest to the fact that Bobby is not just a grill master to us anymore! It tastes just like you are biting into a fresh piece of watermelon with a little vodka kick. It was perfectly suited for the lovely evening we shared.

Watermelon Martinis

1/2 cup sugar
1/2 cup water
5 cups watermelon, seeds removed
2 tablespoons lemon juice
1 1/4 cup vodka
2 ounces melon liqueur (optional )
8 lemon twists for garnish
Bring the sugar and the water to a boil in a small saucepan and cook until the sugar is completely dissolved, let cool.
In a food processor, puree the watermelon flesh. Add a little of the sugar syrup to sweeten, to taste. Put the pureed watermelon into 2 empty ice cube trays and freeze at least 4 hours.
In a blender combine the frozen watermelon cubes, more simple syrup, to taste, lemon juice and vodka, melon liqueur and blend until smooth. Pour into 8 frozen martini glasses, garnish with lemon.
Serves 8
